You can use as much or as little of the following ingredients...
Salad:
Romaine Lettuce
Green Bell Pepper
Chickpeas (canned)
Cucumber
Salami
Olives
Shredded Mozzarella
Purple Onion
Shredded Parmesan
Tomato
Dressing:
9 TBSB Extra Virgin Olive Oil
3 TBSP Red Wine Vinegar
1/4 tsp salt
1/8 tsp black pepper
Chop up all salad ingredients and toss in a large bowl. For the dressing, I like to use one of those Good Seasons shakers you can get at the grocery store. Just put in oil, vinegar and the salt & pepper, cover and shake! It's so easy, delicious and so much healthier than store bought versions.
